Linear Guillotine

Goal: Cut a mat of cold semi-soft dough in continuous motion in square or rectangle. Continuous knife system attached to a variable speed guillotine blade. This project was conceived and realized in an engineering consortium. Integrated into a cooling tunnel, this guillotine can produce squares as small as 6 mm.
